We’ve made chocolate chip cookies and we’ve even made triple chocolate chip cookies., but never have we ever made the classic double chocolate cookies. Today, all that is going to change.

Chocolate Lovers, Rejoice!
Up until recently, I’d never met someone who didn’t love chocolate. Being a long-time card carrier of the Chocolate Enthusiasts Club, I just assumed everyone enjoyed chocolate. I mean, what’s not to love? Turns out there ARE people who don’t love chocolate, and if you are one of them, my apologies- today’s post is not for you. We are doubling down on chocolate, and we are doing it in the most delicious way.

Double Chocolate Cookies
Maybe I say this a lot, but these cookies really may be my new favorite. For starters, the texture is perfect- barely crisped edges, loads of chew, and a barely-there center of gooeyness. Then there’s the flavor: cocoa flavored dough, semisweet chips throughout that aren’t too rich, and the perfect amount of salt that every cookie needs. These are the kind of cookies that truly satisfy your sweet tooth craving in a substantial way, and for all of those reasons, they’re my new fave.

One thing to know about these cookies- they’re big! This recipe calls to use a large cookie scoop cookies, which yields thick, palm-sized cookies. If you’d prefer smaller cookies, try a medium cookie scoop and decrease the baking time by about 3 minutes. Either way, these treats are MEGA yum.
How to Make Double Chocolate Cookies
To make these double chocolate cookies, start with the butter. We cream the butter with brown sugar and sugar until creamy and smooth. Next, add the egg and vanilla extract. Stir together until combined. Finally, add the flour, cocoa powder, leavening, and cornstarch. Use a cookie scoop to portion out large rounds of dough onto a parchment-lined baking sheet and bake in the oven for 10 minutes. I like to nudge the baked cookies with the inner lip of a glass to wiggle the cookies into perfect rounds, but that is totally optional. Enjoy the cooled cookies with a glass of milk- they are truly the best! Enjoy these chewy treats and have a great weekend!

- Yield: 14 Large Cookies
- Category: Dessert
Ingredients
- 3/4 cup (1–1/2 sticks/ 170 gm) unsalted butter, room temperature
- 3/4 cup (150 gm) packed brown sugar
- 1/2 cup (100 gm) sugar
- 1 egg (50 gm out of shell)
- 2 teaspoons vanilla extract
- 1 cup (130 gm) flour
- 3/4 cup (70 gm) dutch process/ dark cocoa powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon salt
- 1 tablespoon (8 gm) cornstarch
- 1 1/2 cups semisweet chocolate chips
Instructions
- Preheat the oven to 350 degrees and prepare two sheet pans with parchment paper or silicone baking sheets.
- In the bowl of a stand mixer or in a large mixing bowl, cream the butter and sugars on medium speed until light and fluffy, about 2 minutes. Scrape the sides of the bowl. Add the egg and vanilla extract and beat until combined. Scrape the sides of the bowl and add the flour, cocoa, baking soda, baking powder, salt, and cornstarch, beating just until almost combined. Add the chocolate chips and continue beating until ingredients are well incorporated.
- Scoop 3 tablespoon sized scoops (I use a large cookie scoop) of cookie dough out 2 inches apart on the prepared baking sheets. If the dough has gotten too soft, chill briefly in the fridge for about 5 minutes. Bake for 11-12 minutes until edges of the cookie are set. The center of the cookie may still seem slightly underdone. Allow to cool completely on the baking sheet or on a cooling rack.
