Admittedly, I’m late to the skillet cookie train, mostly because I’m generally a cookie purist. Lately, however, the idea of a simple and comforting dessert like a skillet cookie has sounded more appealing, so I decided to take a stab at it. What I found is that a skillet cookie like this is for the person who wants their cookies a la mode. This recipe basically begs for a little vanilla ice cream to offset the rich warmth of gooey chocolate. With the perfect balance of sweet and salty, hot and cold, gooey and crisp, this skillet cookie for two is now one of my new faves.

How to Make a Skillet Cookie for Two

I modified this recipe from my best salted chocolate chip cookie recipe. To prepare it, we start with the butter. Cream butter with brown sugar and white sugar until fluffy. Add vanilla extract and 1/2 of a beaten egg, stirring until combined. Stir in the flour, baking soda, and salt, and then toss in the dark chocolate chunks. The dough presses into a small cast iron skillet before baking in a hot oven just shy of 20 minutes. The result is a slightly underdone cookie pie with crisp edges and a gooey center.

10/10 recommend topping this skillet cookie for two with a sprinkle of salt and a bit of vanilla ice cream. I recommend serving the cookie warm, but not so fresh from the oven that the molten chocolate burns your mouth. Keep a glass of milk on hand in case you need a break from all the chocolate- this truly is a chocolate lovers’ dream! If you’re looking for a simple but impressive dessert on the smaller scale, this is definitely it. Give the recipe a try this week and let me know what you think! Happy Wednesday and Happy Baking, y’all!

  • Author: Kate Wood

  • Cook Time: 20
  • Total Time: 25 minutes
  • Yield: 2 Servings
  • Category: Dessert

Ingredients

  • 1/4 cup unsalted butter, at room temperature
  • 1/4 cup sugar
  • 1/4 cups light brown sugar, packed
  • ½ large egg (see directions for clarification)
  • ½ teaspoon pure vanilla extract
  • ½ cup plus 3 tablespoons all-purpose flour
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • 2 ounces 72% chocolate, chopped
  • Pinch of flaked sea salt

Instructions

  1. Preheat the oven to 350 degrees Farhenheit and lightly grease a 6.5” cast iron skillet with baking spray. Set aside.
  2. In a large bowl, cream together the butter, sugar, and brown sugar on medium speed until smooth and fluffed, about 1 minute. In a small bowl, crack the egg and gently whisk with a fork. Pour ONLY HALF of the egg mixture into the butter (reserving the remaining half of egg of throwing away) along with the vanilla extract and stir on medium until smooth.  Add the flour, baking soda, and salt, stirring on low until combined. Add the chocolate.
  3. Press the dough into the prepared pan. Bake in the preheated oven for 18-19 minutes or until the edge is barely set and the insides still looks slightly underdone. Remove from oven and immediately sprinkle with the flaked salt, if desired. Enjoy once cooled slightly with a scoop of vanilla ice cream.

Notes

  • You can also make this recipe into one giant chocolate chip cookie! Preheat the oven to 360 degrees. Prepare the dough as listed above in the directions. Roll the dough into a ball and place on a parchment paper-lined baking sheet. Press down barely to flatten the top of the cookie. Bake for 15-16 minutes or until the edges are golden and the center still looks slightly underdone. Sprinkle with flaked salt and allow to cool completely to set up.
