Do you any family traditions? I’m not talking about the special things you do on Christmas Day or the exciting stuff you look forward to on your birthday; I’m talking about the mundane things that keep your days full and happy. Admittedly, we don’t have many (although I’m always on the hunt), but one of our favorite things to do together as a family is to watch AFV (America’s Funniest Home Videos). Although the days of Bob Saget that millennials remember (*raises hand*) are long-gone, the hilarious snippets of people falling, dogs walking on their hind legs, and toddlers saying downright hilarious things are still alive and well. Please, just give me all of the broken trampolines and babies afraid of their shadow- I AM HERE FOR IT.

After a summer of watching AFV nightly, my kids haven taken to performing the tricks, pranks, and challenges that are regularly featured on the show. The old disappearing-behind-the-blanket trick and the whipped cream challenge are two of their favorites to attempt themselves, and while cleaning whipped cream up off the floor and, oh, I don’t know, the baby’s face, are not among my very favorite things to do, I love seeing them get all into it. It’s pure and fun and all the things I remember childhood being.

Frozen Sprinkle Sandwiches

These funfetti ice cream sandwiches have been another happy spot in our summer. Anything with sprinkles, ice cream, and cookies is bound to be delicious, but treats like these are a showstopper for my kids (and probably yours too!) There’s something so extra about them (Who knows- maybe it’s the sprinkles? the double cookies? the ice cream?), and when I first suggested we make them, my kids thought I was a wizard. Call me Meatloaf, because, truly, I will do anything for love.

The cookies in these funfetti ice cream sandwiches are a riff on my original funfetti cookies which continues, to this day, to be one of the most popular recipes on my site. For good reason- they’re chewy with crisp edges and have all the birthday cake flavor you’d want in a sprinkle cookie. The filling is equally simple: a no-churn funfetti ice cream loaded with sprinkles and that same nostalgic box mix cake flavor. If you’re in a time crunch, you can skip the no-churn ice cream and stick with a store-bought variety, but if you haven’t made no-churn ice cream before, this is a call to action: DO IT. It’s easy and delicious.

Tell me about your family traditions. Where do you cram sweet fun and delight into the everyday? If you are looking for a yummy and festive treat to enjoy with all the little (or big!) kids in your family, definitely consider these funfetti ice cream sandwiches. Particularly during the summer, these are bound to be a delight. Happy Friday to y’all and HAPPY BAKING!

Funfetti Ice Cream Sandwiches

These funfetti Ice Cream Sandwiches are chewy sprinkle sugar cookies stuffed with a no-churn birthday cake-flavored ice cream!

  • Author: Kate Wood
  • Prep Time: 15
  • Cook Time: 15
  • Total Time: 360
  • Yield: 12
  • Category: Dessert

Ingredients

For the ice cream:

  • 2 cups (480 gm) heavy whipping cream
  • 1 tablespoon clean vanilla extract
  • 1 (14 ounce can) sweetened condensed milk
  • 6 tablespoons of rainbow sprinkles

For the cookies:

  • 12 tablespoons (170 gm) unsalted butter, at room temperature
  • 1 cup (200 gm) sugar
  • ½ cup (100 gm) brown sugar
  • 21/2 teaspoons clear vanilla
  • 1 large egg plus 1 large egg yolk
  • 21/4 cups (295 gm) all-purpose flour
  • 1 teaspoon baking soda
  • ¾ teaspoon salt
  • ½ teaspoon cream of tartar
  • 1 cup (160 gm) rainbow sprinkles

Instructions

To prepare the ice cream:

  1. Line a 9×13” or jelly roll pan with a large sheet of aluminum foil. Be sure the foil extends just beyond the sides of the pan for easy removal. Set aside.
  2. In a large bowl or the bowl of a stand mixer, whip the cream and clear vanilla extract on medium speed until it thickens to fluffy, stiff peaks. Fold in the sweetened condensed milk, being careful to not overwork, followed by the sprinkles. Spread it into the prepared pan. Freeze until solid, at least 6 hours but preferably overnight.

To make the cookies:

  1. Preheat the oven to 350 degrees. Prepare sheet pans by lining them with silicone baking mats or parchment paper.
  2. In a large mixing bowl or the bowl of a stand mixer, cream the butter, sugar, and brown sugar on medium speed until light and fluffy, about 2 minutes. Scrape the sides of the bowl and add the vanilla and egg, beating on low until incorporated. Add the flour, baking soda, salt, and cream of tartar, and beat on low speed just until the dry ingredients are combined. Scrape the sides of the bowl and add the sprinkles. Beat just until combined.
  3. Chill the dough in the fridge until it has thickened to a Play-Doh consistency- usually about 30 minutes in the fridge for me. Once chilled, scoop out 1-1/2 tablespoon sized scoops (I use a medium cookie scoop) and roll each dough ball briefly in your hands to smooth out the rough edges of dough. Place on the prepared baking sheets 2 inches apart. Bake in the preheated oven for about 11-12 minutes, or until the tops of the cookies have just begun to crack and the edges are set. They will look slightly underbaked- this will help to keep them soft even when frozen. Allow to cool on the sheet pans for about 5 minutes before removing to a cooling rack to complete cooling.

To assemble the sandwiches:

  1. Use a large round cookie cutter or the lip of a wide-mouth mason jar to cut out rounds of ice cream. Place in between two cookies and refreeze the sandwiches quickly. You can save the leftover edges of the ice cream in a sealable container or freezer-safe bowl. Keep the sandwiches covered while in the freezer to protect their taste.

Notes

  • Clear vanilla extract give these cookie that classic funfetti box cake mix flavor that we all know and love. Pure vanilla extract or vanilla bean paste can be substituted, however, the flavor will differ.

The summer is in full-swing, and to keep you cool during these sweltering months, I’ve got a semi-homemade frozen treat that literally makes my mouth water just thinking about it: chocolate chip cookie ice cream sandwiches. Chewy, sweet and salty chocolate chunk cookies filled with the ice cream of you choice, these bad boys have your name written all over them.

We’ve spent the past few weeks in the sun with salty hair and bellies full of watermelon and frozen cocktails. Enjoying the beach with children is an activity I would more closely identify as “work” over “vacation,” but doing so with friends that feel like family make the effort worth it. My kids are slowly gaining a healthy respect and love for the water, and I have loved the opportunity to watch them experience new things for the first time.

I’m realizing there’s a lot of things you take for granted when you go to the beach without children for most of your life. In fact, it wasn’t until I had two overheated toddlers plastered to my sweaty thighs that I realized just how oppressive the summer heat can be. There’s sunscreen in their eyes, life jacket-induced wedgies, and  never enough juice boxes to go around. The sun’s too hot, there’s sand in their pants, and somehow everyone in the water has a near-drowning experience. By the end of the trip, mom needs another vacation. #firstworldprobs

As a reprieve, I’ve retreated to the lake so that my mom can play grandmother to my babies and I can get some real R&R over the holiday week. To celebrate, you had better believe we’re noshing on these chocolate chip cookie ice cream sandwiches. These frozen treats (and a few bottles of rose) are the reason I’ll be staying sane (ok, and five pounds over my usual body weight) for the remainder of the summer.

The key to these chocolate chip cookie ice cream sandwiches is the cookie. In order to keep this dessert as simple and stress-free as possible, we need to be able to assemble and freeze them in advance. So I’ve made this recipe to be just barely soft and chewy when frozen so that you can enjoy the goods without fussing in the kitchen all week long.

Making the Sandwiches

Like most cookies, we start these by creaming butter and sugar. These have a high percentage of brown sugar for extra chewiness. Next comes vanilla and eggs which stir in until combined. Finally we add the dry ingredients and the chopped chocolate. Be sure to use finely chopped chocolate so that you don’t bite into any hunks of chocolate once baked! While I love huge chunks in normal cookies, I don’t want to be held responsible when you crack a tooth. So just chop it. These cookies get baked just until the edges are set and they still appear slightly underdone.

Once the cookies are cool, sandwich a big scoop of ice cream right between two of them. I prefer vanilla and chocolate, but caramel, cookies and cream, or even chocolate chip would be a great addition here. • Author: Kate Wood
  • Prep Time: 10
  • Cook Time: 15
  • Total Time: 25 minutes
  • Yield: 11
  • Category: Dessert

Ingredients

  • 1/2 cup (113 gm) unsalted butter, at room temperature
  • 1/2 cup (100 gm) packed brown sugar
  • 1/3 cup (70 gm) sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 11/4 cups (180 gm) all-purpose flour
  • 1/2 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1 cup (5 ounces) finely chopped semisweet or bittersweet chocolate (your choice)
  • Ice cream of your choice

Instructions

  1. Preheat the oven to 350 degrees and line two baking sheets with parchment paper or silicone baking sheets.
  2. Cream the butter, brown sugar, and sugar with a mixes on medium speed until light and fluffy, about 1 minutes. Add the egg and vanilla, mixing to incorporate. Next, add the flour, baking soda, and salt, and stir on low just until combined. Add the chocolate and fold to incorporate.
  3. Roll 1-1/2 tablespoon-sized balls of dough on the baking sheet about 2 inches apart and bake in the preheated oven for about 10 minutes or until the outer rim of the cookies are set, starting to bronze, and the inside of the cookies still look slightly underdone. If your cookie dough balls look shiny and greasy or if you know you used butter that was too soft, allow the dough to chill in the fridge briefly, about 20-30 minutes. Allow the cookies to cool completely (you can speed this process up in the freezer!) prior to filling with 1/3-1/2 cup sized scoops of ice cream of your choice. Freeze or eat immediately. You can store these wrapped in the freezer for up to two weeks.

Notes

  • Chopping the chocolate finely is really important here! You don’t want to bite into big chunks of chocolate when the cookies are frozen. Also, using chopped chocolate instead of chips is important as the chips are designed to not melt well.

I figured it was time for man food- something hearty enough to celebrate all the baby daddies out there on this upcoming Father’s Day. What I came up with are some no-fuss, pepper bacon, cheddar, and egg breakfast sandwiches prepared on flaky, layered buttermilk biscuits. The perfect nod to my meat-loving, Southern husband.

Marrying a “Man’s Man”

Brett is really good at man things. He can ride a tractor and change any tire. He’s excellent at killing spiders and unclogging toilets, and I’ve literally watched him run across a 4 lane highway to pull a man out of an overturned vehicle. He’s annoyingly terrific with one-liners, can grill a steak with the best of them, and could probably carry our entire family in his two arms if he had to. This man, even at 37 years old, looks great with his shirt off, and the average housewife could probably make an afternoon out of watching him chop a pile of firewood. (Read: Do not watch my husband chopping firewood with his shirt off. I will cut you.)

Yes, he chews with his mouth open. He’s a little colorblind, particularly when he’s getting dressed for a nice dinner. He farts under the covers, has the attention span of a gnat, and has the absolute worst taste in music. But he works hard for our family. He keeps trying when we fight and makes me laugh when I’m too prideful to do it myself. I catch him rolling in the grass with our kiddos from time to time and he always insists on kissing both of them before they go to sleep at night. He’s a good husband and a really, really good daddy.Buttermilk Biscuits and Pepper Bacon Egg and Cheese Biscuit Sandwiches. Good Husband, Good Dad

I imagine in the future he will coach t-ball teams and bait fishing lines. He’ll teach our kids to drive and will wake them early on Saturdays for donuts and yard work. I can already see him filming the kids before their proms and after graduations, always with a stupid grin and the hint of pride all over his face.

But the thing I admire most about my husband and the way that he parents is that even now, when our babies are still so small and fresh in the world, he’s already concerned about the legacy that he will leave them someday. He has the foresight to know that our children will be affected by the way we exist today, and he is set on building a life that our children can aspire to.

Brett talks a lot about integrity and hardwork. He talks about cultivating a home that our family and friends will want to be apart of. We pray for our children, and we talk about the lessons they need to learn early and the ones we want to protect them from ever experiencing. He talks about having a strong marriage and what he wants to teach our children about being a husband, about being a man.

My husband, although not without his fair share of annoying quirks and morning breath, is a really great father. If there’s anything sexier than a man who reads to his kids before they go to bed, I don’t want to know. And if you tell me there’s anything better than getting old and crochety with the person who is set on growing old and crochety with you, I won’t believe you. I just won’t.

Buttermilk Biscuits

So let’s make some buttermilk biscuits, okay? We start by combining the dry ingredients- flour, salt, baking powder, and soda. Using a pastry cutter, we work in some ice cold unsalted butter, which will ensure that our biscuits are flaky and rich in flavor. Then, we pour in the buttermilk, stirring just enough to work it all into a shaggy dough. With quick hands, the dough pats down and folds several times to produce a dough that will rise and expand into fluffy, pillowy layers once baked. And with that, the dough is finished and reading for cutting!

You can use a knife or biscuit cutter to cut out your biscuits, just be sure that it is well floured. Push straight down while cutting the dough so that those biscuits will rise sky high in the hot oven. A final brush of butter and the buttermilk biscuits are ready for the oven.

Serving the Biscuits

Once baked, the buttermilk biscuits are golden brown, fluffy, and layered- the perfect vehicle for pepper bacon, cheddar cheese, and eggs. Although they are best eaten straight from the oven, you can pre-make and re-warm the biscuits in the oven to save on breakfast prep time. The bacon is rather simple, requiring only a hot oven and fresh ground black pepper, and the eggs can be prepared however your Dad prefers them.

Serve the biscuits warm with melty cheddar cheese on top and any other toppings your Papa or Man friend likes. Maybe some mayo and tomato? Crunchy lettuce and creamy avocado? Maybe some leftover pico de gallo or hot sauce from last night’s dinner? Whatever you choose, just make sure that Dad uses the buttermilk biscuits to sop every last bit of it up. Got it?

Happy Father’s Day to all you daddies out there. And women, take time to love on all the great men in your life. This world desperately needs more good men and fathers. So love your man, your friends, your sons, and nephews well; encourage them to be someone worth looking up to. Chances are, someone already is. Happy Tuesday and cheers!

Buttermilk Biscuits

Flaky, all butter, buttermilk biscuits are a rich and layered treat to use for all of your breakfast sandwiches.

  • Author: Kate Wood
  • Yield: 7

Ingredients

  • 2 cups (260 gm) all-purpose flour
  • 21/4 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • ½ cup (113 gm) unsalted butter, very cold and diced into tablespoon sized pieces
  • 1 cup (240 mL) buttermilk, very cold
  • 1 tablespoon unsalted butter, melted

Instructions

  1. Preheat the oven to 450 degrees and line a pan with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, and salt to combine. Using a pastry cutter or the back of two forks, cut the butter into the flour mixture until the mixture resembles a coarse meal with some pea-sized pieces of butter throughout. Pour in the buttermilk and mix only until barely combined. Do not overmix.
  3. Dump the dough out onto a floured counter and gently pat out into a ¾ inch thick rectangle of dough. Fold the dough in half, rotate the dough 90 degrees, and repeat the folding. Rotate and fold a total of three times total and then pat the dough out until 1” thick. Using a generously floured 2-1/2” biscuit butter, cut out rounds of dough and place them on the prepared baking sheet. Gently collect the remaining dough and pat together so that you can cut out additional biscuits. Lightly brush biscuits with the melted butter and place in the preheated oven, baking for about 13-15 minutes or until the tops of the biscuits are golden brown.

Notes

  • Biscuits are best eaten fresh from the oven but can be made in advance and warmed in a toaster oven.
  • Be sure not to overwork your biscuit dough. This can cause your biscuits to be tough and chewy.
  • Folding the biscuit dough allows for layered biscuits. Using ice cold butter and buttermilk ensures that they will be flaky.
